About Our Coffee

Our coffee is produced in the Microcentral of the La Sierra neighborhood near the city of Medellín, Colombia.

The Process

The process begins by taking the cherry to the microcentral where a pre cherry fermentation process takes place. After the pulp is removed, a new fermentation is done in the mucilage, where lactic fermentations start to improve the body and aftertaste. Finally, after washing, they are left to dry on African beds for 8 to 10 days, allowing the complexity of the notes to mature.
